Development of an industrial drying and maturing process of fish

Drying fish is a common way of conservation. The so called stockfish is traditionally dried over a very long period of time. By this traditional manufacturing of stockfish 40 percent of the fish are spoiled because of quality defects within production.

In a project funded by the EU, Fraunhofer IPM together with partners from research and industry develops an industrial drying process for fish, which is not only faster than common drying processes, but also ensures uniform quality and less waste.
